No-Bake Coconut Drops
3 cups sugar
3/4 cup milk
4 tbsp. cocoa
1 1/2 sticks butter
3/4 cups peanut butter
1 or 2 tsp. vanilla
4 1/2 cups quick oatmeal
Mix sugar, milk, cocoa and butter together and bring to boil. Boil for 1 minute. Quikly add peanut butter, vanilla and oatmeal. Mix well. Spoon onto wax paper and cool.
Nanaimo Cookie
1 cup and 1 tbsp. butter
1/4 sugar
1 square unsweetened chocolate
1 tsp. vanilla
1 egg beaten
2 cups fine crushed graham cracker crumbs
1/2 cup chopped walnuts
1 cup flaked coconut
2 tbsp. instant vanilla pudding mix powder
3 tbsp. milk
2 cups confectioners sugar
4 squares semi-sweet chocolate
Put 1/2 cup butter, sugar, unsweetened chocolate and vanilla in top of double boiler. Cook over boiling water water until well blended. Add egg and cook 5 minutes longer, stirring continually. Add crumbs, nuts and coconut. Stir well. Press into buttered 9x9x2 inch pan. Cool, then chill 15 minutes. Cream 1/2 cup butter until fluffy, then beat in pudding mix and milk. Add confectioners sugar gradually and beat until smooth. Spread over first layer. Chill 15 minutes. Melt semi-sweet chocolate and 1 tablespoon butter over low heat. Spread over second layer. Chill until firm. Cut into 1 inch squares. Keep refrigerated until you are ready to serve.
O'Shannon Bars
Bars:
1/2 cup butter
1 cup chocolate chips
1 cup peanut butter
10 oz. mini marshmallows
3 1/2 cups Rice Krispies
1 cup Spanish peanuts
Bars: Melt butter, chocolate chips and peanut butter on low heat. Add marshmallows and stir in until melted. Add peanuts and Rice Krispies. Spread out in 9x13 inch pan or larger. Frost while still warm.
Frosting:
1 cup chocolate chips
1/3 cup milk
1/4 cup butter
2 tsp. vanilla
2 to 3 cups powdered sugar
Frosting: Melt chocolate chips, milk and butter on low heat. Add vanilla and powdered sugar and mix well. Pour over bars and spread with out evenly. Let cool and cut into 1 inch squares.
